Time for Oak Leaf Tea (Kombucha Style)

A gift of oak leaf kombucha from Adelaide inspired us to take some of our own ongoing (green tea) kombucha  brew into the woods with young red and white oak leaves.


We experimented with freshly picked washed leaves, fresh leaves that had been blanched (steeped briefly in boiling water), and dried pressed leaves. The best tasting results came from the blanched, and is as pretty as kombucha can be…

    Great idea! I never knew that oak leaves could be used this way.

  2. We have been making Acorn Kefir for some years, but this year experimented with caffeine-free Acorn Kombucha — using the Tannin-rich water from soaked acorns to start a new Kombucha mother from one bottle of commercial GTS kombucha.

    The new batch is 8 days old, and has a beautiful 1/16th inch Mother skin forming on the surface …
